Strawberry Cream Pie

strawberryStrawberry Cream Pie on the blog today. Strawberries make everything better. This is an easy and simple recipe that you can make in about 15 minutes. I remember always eating pies that mom would make with cherries and cream cheese. And I thought why not a strawberry version.  And this recipe was formed. Yummy!

Let’s Get Started:

You will need: 

2 boxes of Cream Cheese (8 oz) each

1 small tub of Cool Whip

1 small box of Strawberry Jello mix

1 pint of Heavy Whipping Cream

3 cups of sliced Strawberries

1/4-1/2 cup of Powdered Sugar for pie

4 tablespoons of Powdered Sugar for Whipped Cream Topping

Graham Cracker Pie Crust (9 inches) (or you can make your own with crushed graham crackers and melted butter)

Directions:

In a large mixing bowl, use a hand or stand mixer and mix cool whip, cream cheese, powdered sugar and jello mix until smooth and combined.  It should be a creamy pink color. I usually let my cream cheese reach almost room temperature before mixing because it makes it easier to mix.

Place a layer of the strawberry cream cheese mixture in the bottom of the graham cracker crust then layer the top with strawberries. Then keep layering until all cream cheese mixture is gone. Save 1 cup of strawberries for the top of the pie.

In another bowl, beat with a mixer the whipping cream and 4 tablespoons of powdered sugar.  Beat for about 5 minutes until whipped cream and soft peaks form.

Top the pie with the whipped cream and lay strawberries on top for decoration.  Keep chilled until ready to serve.
