Homemade Beef & Vegetable Soup


We’re having early fall weather today here in Arkansas. This chilly weather makes me hungry for soups and chili. Tonight I’m making a homemade beef soup. This recipe can be used with ground beef, shredded beef or venison. I make several variations of this soup using different kinds of meats. This soup can also be made in a slow cooker. So grab some Corn Bread and let’s make some soup.

Let’s Get Cooking!

You will need:

1 pound of ground beef, shredded beef or venison

4-5 Potatoes peeled and diced

2 cups of Fresh diced Carrots

1 can of Diced Tomatoes

1 cup of Tomato Sauce

2 & 1/2 cups of Beef Broth

1 can of Corn (frozen or fresh work too for all the veggies)

1 can of Green Beans

1 can of Green Peas

1 Package of Beefy Onion Soup Mix

1 small Vidalia Onion diced (I sometimes use green onions).

Salt & Black Pepper for taste

Tip: Add some Macaroni Noodles about 1 Cup.


Place your ground beef into a skillet and cook until browned. In large pot or dutch oven, place potatoes, beef broth, onion, beefy onion soup mix and carrots. Bring to a boil and simmer until potatoes are almost tender. Then add tomatoes, tomato sauce, corn, peas and green beans. Add salt and black pepper. Place a lid on the soup and simmer for 20-30 minutes.  If you are using a slow cooker, cook the meat. Then add the meat, and all other ingredients into the slow cooker. Cook on low for about 6-7 hours.

Serve Warm with Cornbread or Crackers
