Let’s Get Cooking!
You will need:
2 cups of cooked rice according to box directions
2 Chicken Breast Cutlets Cubed or add Shrimp instead
1/2 Onion diced or 2-3 Green Onions diced
3 tablespoons of Butter melted
1 Garlic Clove minced
2 Eggs Beaten
1 cup of Frozen Peas & Carrots thawed
1/4 teaspoon of Sesame Oil
2 tablespoons of Soy Sauce
In a large skillet or wok, place 1 tablespoon of butter, chicken, onion, and garlic. Cook for 4-5 minutes until chicken is done. Next, in another pan, place eggs with peas and carrots. Cook until eggs are scrambled and done (2-3 minutes). Add the egg mixture to the chicken mixture in the large skillet or wok. Make sure the skillet or wok is hot. Also, add the cooked rice too. Whisk the soy sauce, melted butter and sesame oil together. Pour it evenly over the rice mixture. Sauté the rice for about 6 minutes until browned. Stir often. Season with salt and black pepper for taste. Serve.
