It is a nice sunny day here in Arkansas, and I’m wishing for summer to hurry up. This inspired me to post this recipe today. This recipe is good on the grill, on the stove top in a grill pan or in the oven. It makes a delicious side dish. Plus homemade butter is the best butter.
Let’s Get Cooking!
You will need:
4 Ears of Corn shucked
2 tablespoons of Olive Oil
1 pint of Heavy Whipping Cream
1/2-1 teaspoon of Fresh Garlic finely minced
2-3 Green Onions chopped
1 tablespoon of Fresh Parsley minced
1 teaspoon of Bell Pepper chopped
Pinch of Sea Salt and Crushed Black Pepper
Rub the grill pan with 1 teaspoon of oil all over. Heat Grill Pan on stove until hot. Cast-Iron Grill Pans work great on the stove top. Rub each ear of corn with oil. Sprinkle with salt and black pepper. Grill corn for about 30 minutes on a medium-high heat until tender and blackened. Turn corn over every 5 minutes or so.
In the mean time, pour heavy cream into a mason jar with a lid. Shake vigorously for 15-30 minutes. You could let the kids do this part. 🙂 You will see a yellow butter start form and separate from the milk. Pour off milk. Place butter into a bowl and mix well with the parsley, green onions, bell pepper, roasted garlic, and pinch of salt and black pepper. Spread onto your corn. Serve.
Tip: you could bake the corn in the oven at 350F, but rub the corn with oil and spices. Place on a greased baking sheet.
Tip: if you don’t want to make homemade butter, mix spices and ingredients with store bought butter.
