Chicken Fajita Casserole

Chicken Fajita CasseroleLet’s Get Cooking:

You will need:

4 Chicken Breast Cutlets ( you could use ground beef or steak fajita meat instead of chicken)

1 package of Taco or Fajita Seasoning (or use can use cumin)

1 Lime juiced

1 Bell Pepper sliced or diced

About 4 cups of Doritos Chips or Nacho Cheese Chips crushed

1 package of Shredded Fiesta Cheese (about 2 cups)

1 can of Rotel Mix or Roasted Tomatoes (you can make it spicy by adding Hot Rotel Mix)

1 Onion diced

1 Garlic Clove minced

1-2 cans of Chili Beans

2 cups of cooked White Rice

1/2-3/4 cup of Salsa or Taco Sauce

2 tablespoons of Fresh Cilantro finely chopped

1/4 cup of Chicken Broth

Pinch of Salt


Cube or thinly slice chicken breast cutlets. Place the pieces of chicken, taco seasoning, onion, garlic, cilantro, lime juice, bell pepper and chicken broth into a hot skillet. I use an iron skillet. Cook chicken until done about 4-6 minutes.

Mix rice with salsa or taco sauce.

In a casserole dish, create a layer of crushed Dorito Chips. On top of the chips, create layers of the chicken mixture, rice, beans, tomatoes and shredded cheese until all ingredients are all used. On the top of the casserole, place another layer of crushed Dorito Chips on top if desired during the last 10 minutes of cooking to keep chips from burning. Bake at 350F for 20-25 minutes.

Top with fresh lettuce, avocado, black olives or sour cream.
