Lemon Chicken Alfredo

chicken alfredoHello All, I just finished my classes for pharmacy school, and I’m ready to share some recipes. This recipe is delicious and quite easy.

Let’s Get Cooking!

You will need:

4 Chicken Breast Cutlets

1 Box of Pasta of your choice

2 cups of Heavy Cream

1 Lemon Juiced

4 oz of Cream Cheese softened

1/2 cup of Grated Parmesan Cheese

2 Garlic Cloves minced

1/4 cup of Green Onion Chopped

1-2 Tablespoons of Fresh Basil Chopped

1 Stick of Butter

Optional Veggies: Broccoli, Mushrooms, Squash or Asparagus. Any of these make a great addition to the pasta.

Rub each chicken breast with a little olive oil and salt. Bake the chicken breasts at 350F for about 20 minutes until done or Grill the chicken breasts about 5-6 minutes each side. Chicken should reach 165F when done. Cook pasta until tender in boiling water and add a pinch of salt to your pasta water. In a skillet, sauté butter, green onion, basil, lemon juice, garlic and other veggies if using until tender about 3-4 minutes. Whisk in heavy cream, cream cheese and parmesan cheese. Reduce heat to a medium to medium-low and whisk continuously. Keep cooking and whisking until the mixture reduces to a sauce. This takes about 5 minutes or so. Once sauce is reduced, toss in chicken and strained pasta. Mix well and garnish with parmesan cheese or chopped parsley. Serve with Garlic Bread and Salad.
