It’s fall and cool weather is upon us. Let’s grab a hot bowl of chili, crackers or cornbread and set by the fire place with family and a movie. Sounds like a plan to me.
Let’s Get Cooking!
You will need:
1 and 1/2 pounds of Ground Beef or Venison or Turkey
1 medium Onion diced
1 Clove of Garlic minced
1 Green Bell Pepper chopped
2 stalks of Celery chopped
1/2 cup of V8 Tomato Juice
1 cup of Light Beer or Beef Broth as a substitute
2 (8oz) cans of Tomato Sauce
1 can of Rotel Tomatoes
1 square of Chocolate (no chocolate flavor but enhances the other flavors in the chili to create a nice rich flavor with a hint of sweetness). My mom adds this to her chili and it’s great every time.
2 (8 oz) cans of Chili Beans (optional) (other beans can be used too)
1 Chili Seasoning Packet plus 2 heaping teaspoonfuls of Chili Powder
For Heat Optional: Add 1/2 teaspoon of Cayenne Pepper or 1 Jalapeño diced.
In a large soup pot, brown and cook meat, onion, garlic, green pepper, jalapeño if using and celery. Once cooked, then drain off excess fat. Add, beer or beef broth, tomato sauce, tomato juice, Rotel tomatoes, chili seasoning, beans, chocolate square and salt and black pepper if desired. Cook on low to medium heat for 20-30 minutes until chili is thick. If chili is too thick, you can add more beef broth. Serve with cornbread, crackers or shredded cheese.
