Some people call these Buckeyes, Peanut Butter Truffles or Peanut Butter Balls. These are easy and a great way to get your kids in the kitchen.
Let’s Get Cooking!
You Will Need:
3/4 cup of Creamy Peanut Butter
1/4 cup of Melted Butter
1 and 3/4 cups of Powdered Sugar
1 teaspoon of Vanilla Extract
1 package of Ghirardelli Chocolate Chips for Melting (other brands of chocolate can be used) (white or dark chocolate can be used)
Tip: If using white chocolate, add 1-2 drops of Red or Green Food Coloring to the chocolate to make Christmas Colors. Add sprinkles and get creative. 🙂
Using an electric mixer, mix the peanut butter, vanilla extract and melted butter until combined. Gradually add the powdered sugar until a cookie-dough like consistency forms. Roll the mixture into balls and place on a baking sheet lined with wax paper. Place into the freezer for 30 minutes to firm up. Melt chocolate chips in a double boiler. Dip the frozen peanut butter balls into the chocolate using a spoon or toothpick. Let cool and Serve.
