Hello Everyone, I apologize for not writing on the blog in a few weeks. I have been really busy with work and rotations. Also, I started a fitness plan which takes up most of my free time or lack of. Anyway, my husband loves breakfast and loves this hash so I made this for him this morning.
You can make this hash with Bacon, Ham, Corned Beef or Sausage.
Let’s Get Cooking!
You will Need:
2 Medium Potatoes peeled and diced (if you use red potatoes, I would just leave the skin on the potatoes)
1 small Onion diced or 2-3 Green Onions diced
1/2 teaspoon of Garlic minced
1/2 Bell Pepper diced
6 slices of Bacon
1/2 cup of Cheese shredded
1-2 tablespoons of Olive Oil
Salt and Black Pepper for Taste
Boil potatoes until almost tender and then strain. Place potatoes, onions, peppers and garlic into the skillet with the olive oil. Sauté on medium-low heat until tender. In another skillet, fry bacon until cooked. Chop bacon into pieces and stir into the potatoes mixture. Sprinkle the cheese on top. Fry the eggs in the bacon grease in the skillet. Once eggs are cooked. Place them on top the hash. Sprinkle with chopped parsley for garnish. Serve.
