Fresh Blueberry Muffins

What makes this recipe great is its versatility. You can substitute other fruits if you don’t like blueberries. Other fruits such as sliced strawberries, raspberries or blackberries would be great options. batter






Let’s Get Cooking!

You Will Need:

1-2 cups of Fresh Blueberries

1/2 cup of Sour Cream or Yogurt

1/2 tsp of Salt

1/3 cup of Milk

1 and 1/4 cups of All Purpose Flour

1 tsp of Vanilla Extract

1/2 cup of Oil

1 tsp of Baking Powder

1 Large Egg

2/3 cup of White Sugar


Mix milk, egg, sugar, vanilla extract and oil until well blended. Mix flour, baking powder and salt together. Gradually add the flour mixture into the milk mixture until well blended. Next, add the sour cream.  Finally, fold in the blueberries but don’t over mix. Lightly grease your muffin tins and fill the tins to the top with muffin batter or use liners. Bake at 375F for about 20-25 minutes until cooked and lightly browned. Let cool and serve. Tip: you can add streusel to the tops of these too.
