Broccoli & Cheese Soup

This soup is great with sandwiches or in a bread bowl. It’s rich and creamy with a mild sharp cheddar flavor.





Let’s Get Cooking!

 You will need:

1/2 stick of Butter

1/4 cup of All-Purpose Flour

2 Garlic Cloves minced

1 small Onion diced

1 cup of Carrot Matchsticks

3-4 cups of Fresh Broccoli chopped

3 cups of Chicken or Vegetable broth

2 cups of Half and Half

2 cups of Velveeta Cheese cubed

1 cup of mild cheddar cheese shredded

Salt and Black Pepper for taste


In a dutch oven or soup pot, saute onions and garlic with a teaspoon of oil until tender.  Add butter and melt.  Once butter is melted, add flour and whisk to form a roux. It will look similar to clumps of flour or dough. Next, pour in the broth and half and half. Increase the heat to medium-high and whisk until the sauce is smooth. Next, whisk in the cheese and add the broccoli and carrots. Cook on medium-low for about 20-30 minutes until thick and vegetables are tender. Season with salt and ground black pepper. Serve with crackers, sandwiches or in bread bowl.
