This is my take on Zuppa Toscana. This creamy soup loaded with sausage, bacon and potatoes is simply delicious.
Let’s Get Cooking!
You Will Need:
1 pound of Italian Sausage
1/2 cup of Cooked Crispy Bacon chopped
3 large Russet Potatoes peeled and diced
1 cup of Kale chopped
1/4 cup of Onion chopped
3 cups of Chicken Broth
2 cups of Half and Half
1/2 stick of Butter
1/4 cup of Cheddar Cheese (I had to add this one) 🙂
Salt and Black Pepper to taste
In a large soup pot or dutch oven, cook sausage and onion together until sausage is no longer pink and cooked. Add potatoes, kale, bacon, chicken broth, butter, cheese and half and half. Cover pot and bring to a boil. Reduce heat and cook on medium heat until soup is thick and potatoes are tender. Serve.
