Enchiladas are delicious, but also known to carry a lot of calories. However, these enchiladas will hit your craving while packing a good amount of protein, low carbs and low calories. This is a guilt free meal. These also make several enchiladas so you can meal prep them or prepare them for a family who is trying to eat healthy. These enchiladas also pair great with a side salad.

You will need:
1 and 1/2 pounds of Ground Turkey (93% Lean) ( you could substitute 93% lean ground beef or chicken)
1/2 cup of Onion diced
1/2 cup Bell Pepper diced
1/2 cup of Tomato diced
1 Garlic clove minced
1/2 Lime juiced
1 can of Red Enchilada Sauce (15oz)
1 cup of low-fat Mexican Cheese Shredded
6-10 Tortillas (Corn or Whole Wheat)
2 tsp of Taco Seasoning or substitute (1 tsp of Ground Cumin, 1/2 tsp of Black Pepper and 1 tsp of Smoked Paprika)
Place ground turkey, garlic, onion, tomatoes, lime juice and bell pepper in a skillet on medium heat and season with taco seasoning. Fully cook the turkey and veggies in skillet. The turkey and chicken need to reach 165F to be fully cooked. Taste and adjust seasoning of meat if needed. Warm tortilla shells in microwave for about 20 seconds. Dip each warmed tortilla shell into the enchilada sauce. Place 1-2 large spoonfuls of the cooked ground turkey mixture into the tortilla shells and roll each of them up. Place the rolled tortilla shells into a casserole dish. Pour the remaining enchilada sauce over the top and sprinkle with cheese. Bake at 350F for 20-25 minutes. Serve or meal prep.
